Cherry Cheesecake Recipe

Happy Easter everyone!

I hope you all are having a chocolatey day and enjoying the holidays. 
Instead of an Easter manicure (which I hope to post about tomorrow) I have for you my very first food post. Today, I prepared this Cherry Cheesecake for an afternoon with my parents in law. I just love cheesecake of all kinds and ever since I've been to New York City, I am addicted to their version of this sweet treat. I also love cherries, so both combined are perfection. Here is what you will need:

160 g shortbread
1 tablespoon sugar
a pinch of cinnamon
100 g butter

200 g cream cheese
150 g sugar
500 g mascarpone
5 medium-sized eggs
1 teaspoon pure vanilla extract

370 g canned cherries
250 ml cherry juice
1 tablespoon cornstarch
Preheat oven to 180°C/350°F.

First, crumble the shortbread. I like to use a freezer bag and a rolling pin and simply roll over the shortbread until it turns to crumbs. Soften the butter, then add shortbread, 1 tablespoon of sugar and cinnamon in a bowl and mix until well incorporated and crumbly. Press this mixture into a 26 cm springform tin.

Beat together the cream cheese, sugar, mascarpone, eggs and vanilla extract in a bowl until smooth.

Pour cream cheese mixture on top of the biscuit base. Bake at 180°C/350°F for 45 minutes. Run a knife around the top edge of the cake to loosen it and cool the cake completely in springform on a rack.

For the cherry topping, place all ingredients together in saucepan. Bring to a boil. Once it is boiling, cook it for an additional one to two minutes then remove from heat. Spread topping over the cheesecake and let cool.

Et voilà, you're all done and the cake is ready to be served!
