#instafood Vol. 2 ~ Pancakes

Happy Sunday everyone!

If you follow me on Instagram you might have seen that this past Friday I suffered a severe break on my swatch hand. So I chopped down all my nails to nubbins, which per se is not a problem for me. I do enjoy a clean fresh start from time to time. I just don't like the look of my hands with extremely short nails. First world problems, I know, but sometimes I go totally mental over things like this. Don't get me wrong, I do love shorties on other people, I just can't pull them off. So I won't show any swatches until the break has grown out a bit. 

This gives me the perfect opportunity to share a few other things that have been on my "to blog about" list for quite a while now. First up is my very favorite pancake recipe. I just love pancakes with fresh fruits, they brighten any gloomy morning... or afternoon or evening, just whenever I feel like needing a little yummy treat ;)

Here is what you need for 6-8 pancakes

1 1/2 cups all-purpose flour
1 tablespoon baking powder
Pinch of salt
1 egg
1 cup milk
1 tablespoon honey
2 tablespoons butter, melted
1 banana or a handful of blueberries
In a large bowl, mix together the dry ingredients, then add egg, milk, honey and butter and mix until combined. Finally, fold in the fruits of your choice. Pour approx. 3 tablespoons per pancake in a hot, lightly buttered pan and cook from both sides until lightly browned. If you like, drizzle with maple syrup and enjoy!
