#instafood Vol.4 ~ Low Carb Pancakes

Happy Sunday everyone!

I hope you're all having a great weekend so far. I am literally melting here behind my computer screen. This weekend we're having temperatures in the 90s°F (around 30-35°C) which is way too hot for my liking. So I am hiding inside with the blinds shut to keep as much heat outside as possible. I might go out and get some ice cream later this afternoon, though ;)

Today I have another quick and easy recipe to share with you. When I posted a photo of my low carb pancakes with red berries on Instagram, a few people asked for the recipe. To be fair, I did not invent this recipe. I found it on a German website called EatSmarter. At first I was afraid the mouthfeel of these pancakes would be different and unusual, but I was surprised that these were almost the same consistency as my regular pancakes. So if you like pancakes but want to cut out the carbs, this might be perfect for you. 

Here is what you need to make 10-12 small pancakes:

1 ripe banana 
2 eggs  
a dash of cinnamon 

Blend everything together until you get a homogenous mixture. Heat 1 tablespoon of oil in a pan and add one tablespoon of dough per pancake. Bake until lightly browned from both sides.
I like to combine my pancakes with fruit, especially bananas, blueberries or apples. This time I went with a red berry mixture that I had left in the freezer.

You do not need extra sugar for this recipe. Usually the sweetness from the banana is enough. However, if you prefer your pancakes sweeter, you can add a bit of Stevia or another sweetener of your choice.
