One of the things I probably love most about Autumn are gloomy afternoons. When the weather is chilly outside I love to get cozy on my couch. I light a candle, make myself a hot cup of tea, grab a blanket and just dream away. To round up a pleasent afternoon I treat myself to a yummy piece of cake. But let's face it, on such days I am just too lazy to go and get something from the bakery or bake some cake myself. Recently I discovered mug cakes and went a bit crazy experimenting with different ingredients and flavors. The combination of banana and peanut butter is one of my favorites.
Here is what you need for 2 servings:
1 tablespoon crunchy peanut butter (creamy works, too, if you don't like the chunks)
half a ripe banana
1 tablespoon oil (sunflower or rapeseed oil works best)
2 tablespoons milk (lactose-free, soy or almond milk if you're allergic)
50 g brown sugar
1/4 teapsoon vanilla extract
pinch of salt
60 g self-rising flour
2 microwave safe mugs
Put the peanut butter in a mug and carefully heat in the microwave on low power until it starts to melt. Add banana and mash together using a fork. Then add the egg, oil, milk and mix well. Add remaining ingredients and stir until you get a homogenous mixture.Divide batter among two mugs and microwave each mug for 2 minutes at 900W. Take out the mugs, let cool for a few minutes and enjoy your banana peanut butter mug cake while it is still warm!
